About Tandoor and Tandoor food

Tandoor is a clay oven used in cooking and baking. The heat for a tandoor was traditionally generated by a charcoal fire or wood fire, burning within the tandoor itself, thus exposing the food to both live-fire, radiant heat cooking, and hot-air. Temperature in a tandoor can approach 480;C (900’F). Some modern day tandoors use electricity or gas instead of charcoal.


The tandoor is used for cooking certain types of foods, such as Tandoori Chicken, Chicken Tikka, Lamb Tikka, Prawn Tikka, Paneer Tikka, Sinke Kabab etc. and bread varieties like Tandoori Roti and Naan.
Tandoori dishes are marinated over night in a yoghurt based herb sauce, which are then placed into a burning oven through a long metal skewers. Once the meat is well cooked, the pieces will be blended to a sauce followed by an instant serving in a Karahi bowl or Handi bowl or Shizzler hot pan or in a Thali plate.

About Curry and Masala

Curry & Masala is a common name for a wide range of spices in Nepalese cooking. The major spices in curry sauce are turmeric, coriander, and cumin in addition to some other spices that are locally available in different geographical regions. Chicken Curry, Lamb Curry, and Veg-Curry are the classical curry dishes.
Masala sauce is either a combination of dried spices or a paste made from a mixture of spices and other ingredients, such as garam masala. Chicken Tikka Masala, Lamb Masala, and Bhindi Masala are favourite masala dishes.
